Grilled Red, White and Blue Cobbler


Summertime means fresh fruit from farmer's markets and roadside stands.  While fruit is great on its own, I can't resist a good cobbler or pie made from fruit.  I recently discovered a simple grilled cobbler and have altered it a bit for my own needs.  Make this a red, white and blue dessert for the upcoming 4th of July holiday.  But, you could just as easily make this with any fruit combination of berries or stone fruits like peaches.



Begin with 4 cups of blueberries and strawberries.  I would recommend using fresh fruit for this.  Slice your strawberries into bite-sized chunks.  Place into a large mixing bowl.


Next, add your sugar and flour mix.  Stir to mix well.


Pour your fruit, flour and sugar mixture into a 9 x 13 greased aluminum pan.  Then cover with foil.


Place the fruit mixture onto a hot grill over your coals.  Allow this to cook for about 10 minutes.  You want the fruit mixture to begin to thicken the juices around the fruit.  The cooking time may vary based on how hot your coals are.


Meanwhile, cut up a can of canned biscuits into fourths.  When the fruit and juices begin to thicken, distribute the canned biscuits over the fruit and recover with foil and continue to cook for 15 more minutes.  Again, this cooking time may need to be adjusted depending on the heat of the coals.


When your biscuits are done, remove the foil and serve with whipped topping for an easy dessert.  And if you have leftovers, people will love this for breakfast the next day with coffee.  Not that we have ever done this.  

So, stop on the way to the campground and pick up some fruit and make a cobbler while you are grilling burgers and dogs.  It doesn't get more American than that.  It's delicious and so easy!

Red, White and Blue Cobbler gets it name from the blueberries and strawberries in the dessert then finished with whipped topping at the end.

Ingredients:
  • 4 cups of blueberries
  • 4 cups of strawberries
  • 1/2 cup sugar
  • 4 tbsp of flour
  • canned biscuits
  • non-stick spray
  • aluminum foil
  • 9 x 13 aluminum pan
  • whipped topping
Instructions:

  1. Slice strawberries.
  2. Mix blueberries, strawberries, flour and sugar in a large mixing bowl.
  3. Spray a 9 x 13 aluminum pan with non-stick spray.
  4. Pour fruit into your prepared pan.  Cover with foil.
  5. Grill for 10 minutes or until the fruit is bubbling and starting to thicken.
  6. Cut canned biscuit dough into fourths.
  7. Distribute the canned biscuits over the top of the fruit.  
  8. Cover and cook for 15 more minutes or until biscuit dough is done.
  9. Serve warm with whipped topping.

    1. Its so easy and so good. If you do this on a grill that has a lid, the biscuits should brown on the top. But it is good either way!
