5 Pumpkin Recipes for You to Enjoy at Home or at the Campground

There is nothing like a visit to the pumpkin patch in the fall.
 

The like or dislike of pumpkin is a toss-up for lots of people.  I think it has gotten lumped into the pumpkin spice latte category that turns a lot of people off.  But, pumpkin can be a sweet or savory ingredient.  While I tend to lean toward the sweet, I do love savory options with pumpkin.  I have 5 favorite recipes that I encourage you to try this fall.  These are perfect for both home and the campground!

Have you seen that YouTube video where a football fan carry's on about his dislike of Tennessee orange?  I'm sorry Tennessee fans, but that video is too funny.  I can't help it!  I love pumpkins and fall equally.  It has nothing to do with the color or football team. I just love the seasonal nature of this fruit.  Yes.  It is a fruit.  So, what has made my list of 5 fall favorites?  I actually have 4 sweet recipes on my list and one savory winner at the end.  

Pumpkin Pie Dump Cake is a big win for me because it is the best of both worlds - cake and pie!  Who wouldn't love that!

Pumpkin Pie Dump Cake

Pumpkin Pie Dump Cake is the best of an easy dump cake with the taste of a pumpkin pie.  If making a pie is not your thing, this is so easy and could be baked in an oven at home.  But, you could also bake this in your Dutch oven at the campground.  I found this recipe on The Country Cook's blog and loved it last year.

To bake this in a Dutch Oven, you would need to use an app like Dutch Oven Help to give you the exact number of briquettes to be placed on top of your Dutch Oven Lid and the number to place under the base.  For example, in our 10 inch Dutch Oven, to bake this desert on 350 as the recipe you would need 14 briquettes on top and 6 below.  This would generate a 350 degree heat environment.  I would encourage you to check your dessert every 15 to 20 minutes just to be sure it isn't burning or getting too brown.  

But, ultimately, you could layer your ingredients into your Dutch Oven lined with parchment paper and cooked just like you would a traditional oven.  This would be perfect for a Thanksgiving campground meal or just a fall treat in general.  

Sourdough and pancakes?  Yes and more yes!  I really love this combo.  It's seasonal.  It's delicious.  It is all the things!


Sourdough Pumpkin Pancakes

It is no secret that sourdough is a huge thing at our house.  I use it weekly to cook something.  Sourdough pumpkin pancakes are so delicious and tangy.  You can start your batter the night before and have it nearly there and ready to cook the next morning.  There is nothing better than cooking hot pancakes on our Coleman Camp Stove and Cast Iron Griddle while drinking coffee.  If you have gotten into sourdough, give these a try.  You will be hooked just like us!

Best Ever Pumpkin Muffins

These muffins really are delicious.  And while the recipe name says best ever pumpkin muffins, these may be the best muffins I've ever had.  They are soft and perfectly spiced.  They store and travel well.  You could make these ahead of time and eat these at the campground with eggs and bacon.  Or they could be a great snack on the road with coffee.  I cannot say enough great things about this recipe.  It is probably my favorite recipe for pumpkin period.  Make these muffins immediately!  You can thank me later!  Julie from The Lovely Kitchen hit a total home run with these, and I'm so glad I found this recipe.

Pumpkin dip is versatile and so good.  I love how this could be the start for a dessert bar that includes lots of yummy options.


Pumpkin Dip

Pumpkin dip is a fall favorite at my house.  You can serve it with sliced apples or pears.  But it is also great with ginger snaps or pretzels.  I love how easy this is.  You can enjoy it as a snack or an appetizer.  It travels easily and can be made ahead.  

Pumpkin doesn't always have to be sweet.  Savory is an excellent way to use pumpkin.

Turkey Pumpkin Chili

Want a savory pumpkin option?  This creamy pumpkin chili has lots of savory ingredients, uses canned beans as well as lean turnkey.  Do at least one soup or chili night while camping in the fall or winter.  This is a perfect make-ahead and freeze meal to pack and take to the campground.  Enjoy this with grilled cheese sandwiches or a hearty bread.
